Stuffed mushrooms with Falafel or Hummus
Following on from my last post about falafel, this nice stuffed
mushroom recipe is easy to make after work, and because it's
vegetarian you don't have to fluff around defrosting meat.
The concept is to take a large field mushroom - sprinkle some herbs
and garlic over the top, and let it absorb some oil and vinegar. Then

Cafe style Creamy Mushrooms
I call this recipe "Cafe-style creamy mushrooms" because they are
every bit as good as what you get when you go out for breakfast on a
Sunday. The cafes seem to be able to cook their mushrooms perfectly -
just the right amount of Garlic and herbs, while the creamy sauce
isn't too runny and not all thick and chunky either. Mmmmmmm.
