Traditionally made from corn or maize (pre-soaked in lime juice to release the vitamin niacin and the amino acid tryptophan), the wheat based tortilla is an innovation made with an unleavened, water based dough, pressed and cooked like corn tortillas, as follows.
4 Cups flour 1/2 Cup of shortening, 1 tsp. salt 1 Cup of warm water
Mix 2 Cups flour, all of the shortening and salt until the mixture has the consistency of small crumbles. Add the warm water. Mixture will be sticky. Add what remaining flour is needed and knead until dough is pliable and spring. cover and let sit for a minimum of one hour. Form a ball from a small portion and roll out with rolling pin and cook over medium heat on a cast iron skillet until brown spots form.
