Ingredients
- 5 large tomatoes, finely chopped (best at room temperature)
- A large handful of chopped coriander
- 1 grated carrot
- half a red onion, finely chopped
- Juice of half a lemon, and a little lemon zest
- Olive oil
- Salt and Pepper
Method
