I have only just started getting into making nice salads and dressing them properly, and I'm really enjoying how easy it is to make something nice.
Making dressings is actually easier than it sounds, and I don't think I'll ever go back to buying expensive creamy dressings in small tubes again.
Compare the list of ingredients in a homemade dressing with those on the back of a factory made bottle, and I think you will agree the homemade one is the better choice.

Mandarin salad
- Cos or fancy lettuce
- 4 mandarins, as sweet as you can get them
- 1 capsicum
Mandarin dressing
- 9Tbsp extra virgin olive oil
- 2 Tbsp white wine vinegar
- 3-4 segments of mandarin, squeezed
- 2Tbsp fresh cream
- 1/2 a teaspoon of sugar, if required
- Salt and pepper to season
Assembly instructions
This is not complicated. The salad involves breaking the lettuce into smallish pieces, then chopping the capsicum. Add the segments of mandarin to the salad, reserving a few for the dressing.
For the dressing, add the oil, vinegar, cream, salt and pepper to a jar. Add segments of mandarin one by one, shaking and tasting each time. If after 4 segments of mandarin have been added the dressing is still not sweet enough, add a smidgen of sugar, but this is probably cheating.
Give the dressing a good shake, and coat the salad just before serving.

I enjoyed this salad with my lovely slow-cooked lamb pizza.
