There's one thing I love about his shows though - you actually see him doing all the work. What I mean by this is that he doesn't have pre-prepared dishes with exactly 150g of butter, or a dish with 3 teaspoons of lemon zest.
If Jamie needs some butter, you get to see him go to the fridge, grab the butter and chop a big block off the end. If he needs some lemon zest, you get to see him zest it off the lemon. Respect.
On top of that, he explains the why as much as the how. Surely, any fool can follow a recipe, but I like to know which bits are important, and which bits aren't. I like to know what I can swap if something is out of season, and also what tricks I can do to make the job faster.
I find watching his shows more about getting ideas than about learning about a specific recipe. It's great.
